Scanner and iPad camera problems

Really strange problem with scanning and taking pictures of my illustrations now. Whenever I scan using my Epson scanner/printer, I don't see the scanning preview window anymore. The printer is scanning, but nothing pops up on the screen/my monitor. Not sure what happened, it was perfectly fine just a few months ago, and then one day during one of my scanning sessions, the preview window disappeared. I didn't really do anything different at that time but after that, the scanning preview window never popped up anymore. 

So, what happens now is, after I scan something a window pops up asking me to save the file, which I do. Then I open the image in my Clip Studio Paint program to edit it. I cannot preview the scan or adjust the scanning size prior to that.

Another thing I noticed is the quality of the scans. They just turned out really blurry and the colors come out all wrong:

I tried adjusting the scanner settings and scanning at a very high resolution (600dpi) but the scan is still very blurred and the colors are too different from the original. As if the pic was a really small one that was blown up and there was a problem with how the scanner was picking up colors. I also uninstalled and reinstalled my scanner software, and then even reset my Windows to an earlier point. No dice.

Another issue I've been having is that whenever I take a photo of my illustrations using my iPad, the scan is a little bit blurry. The problem is nowhere near as bad as the issue with my scanner, but I noticed a marked difference a few months ago. The problem only exists when I scan illustrations of my artwork, not photographs, for some reason.

On my iPad: 

I took the same pic using my mom's iPhone 12 and the picture is much crisper:

There shouldn't be much difference between the two- hers is an iPhone 12 and mine is an iPad Pro 2020. The color are accurate in both but for my iPad, it looks blurred when zoomed at 100 percent.  
It also feels like that when I upload my work to different websites like paint my photo- like the illustration is getting uploaded at a much lower resolution, so the pic looks blurred.
